Stuffed Pumpkin.
Take a whole pumpkin, large enough to serve the number of people for whom you are cooking. They range in size and colour so take the one that suits your taste. Cut the top off and remove the seeds. Fill with Bread and Rice bake. Add some grated cheese or a crumbling of cottage cheese. Sit the top back on and bake in the oven until cooked. It won't take long, the filling is already cooked. Don't over cook it or it may collapse. Test occasionally with a thin skewer.
Baked Bread & Rice
To ten slices of stale bread and a cup of water and half a cup of finely sliced celery, add half a cup of finely sliced button mushrooms. Shred and add six or eight large silverbeet leaves and a tblspn of olive oil. Add one and a half cups of cooked rice and a half cup orange juice. (If you use fresh oranges, add the zest as well for extra flavour.) Add one egg, one tspn sage, half tspn thyme, half tspn salt and quarter tspn sugar, quarter tspn pepper and a finely chopped onion.
Mix all well and spread evenly in a baking disk and bake for about 30 minutes or until browned at 250 deg.(F). Use as a side dish. Or it goes well as a cold salad the next day.
